My husband has declared that he cannot listen to me talk about cupcakes for another minute, which is unfortunate because I have been obsessed with them lately. When I made my coconut-lime pavlova cupcakes, they were all I could think about for days, and pretty much all I talked about for at a day and a half. I suppose it's only fair that I let him off the hook (seeing as I don't want to hear an endless monologue about hockey or business meetings or how to organize our bookshelves); I'll just have to call sympathetic friends and post about it here to try to get it out of my system.
So, here's what I've been obsessing about this week: peanut-butter filled devil's food cupcakes with caramel frosting and a Skor garnish.
I'm not a huge fan of chocolate cake, so it's taken me a while to work my way around to trying it out. A friend asked for a chocolate-peanut butter cupcake combination, and I thought about a few frosting options before I settled on caramel. I found a fantastic (and very easy) recipe at allrecipes. Some of the comments suggested adding whipping cream and confectioner's sugar to achieve a good consistency, so I tried that. For the filling, I mixed:3 tbsp peanut butter
2/3 c. icing sugar
1 tsp vanilla
I used the devil's food cake recipe from the Joy of Cooking, but I think I'll look for a new base; it's a very nice cake but I'm looking for something really chocolatey. If anyone has any suggestions, I'd love to hear them!
