Obsessed with Cake

My husband has declared that he cannot listen to me talk about cupcakes for another minute, which is unfortunate because I have been obsessed with them lately. When I made my coconut-lime pavlova cupcakes, they were all I could think about for days, and pretty much all I talked about for at a day and a half. I suppose it's only fair that I let him off the hook (seeing as I don't want to hear an endless monologue about hockey or business meetings or how to organize our bookshelves); I'll just have to call sympathetic friends and post about it here to try to get it out of my system.

So, here's what I've been obsessing about this week: peanut-butter filled devil's food cupcakes with caramel frosting and a Skor garnish.



I'm not a huge fan of chocolate cake, so it's taken me a while to work my way around to trying it out. A friend asked for a chocolate-peanut butter cupcake combination, and I thought about a few frosting options before I settled on caramel. I found a fantastic (and very easy) recipe at allrecipes. Some of the comments suggested adding whipping cream and confectioner's sugar to achieve a good consistency, so I tried that. For the filling, I mixed:


1 cup smooth peanut butter
3 tbsp peanut butter
2/3 c. icing sugar
1 tsp vanilla


I used the devil's food cake recipe from the Joy of Cooking, but I think I'll look for a new base; it's a very nice cake but I'm looking for something really chocolatey. If anyone has any suggestions, I'd love to hear them!


I'd like to have a few more tasters; Derek doesn't really care for chocolate cake either, and rated this "very good." I prefer to make things that are "kick-you-in-the-face delicious," and need a few more people to test it out to see how it fares with chocolate cake lovers. Overall, though, I'd say this experiment was successful. I'll probably end up trying these again.
